The Junior Chef is a developing culinary professional within the EHA kitchen. Work tasks: Daily Production • Execute mise en place independently and as instructed • Prepare assigned components and selected dishes for breakfast, lunch and dinner • Follow established recipes, methods and plating standards with precision • Ensure readiness for service at all times • Support retreat menu execution across all meal periods as required Kitchen Operations • Maintain a clean, organised and efficient workstation • Participate in shared opening and closing procedures • Assist in receiving, checking and storing deliveries • Apply FIFO and correct stock rotation at all times • Handle equipment and ingredients with care and responsibility Service Support • Support the Sous Chef and Head of Culinary during service • Communicate clearly and calmly during busy periods • Maintain focus and consistency under time structure • Assist with basic plating and pass organisation as required Foundational Culinary Preparation • Prepare stocks, broths and base elements • Support fermentation, pickling and preservation work • Assist with plant-forward and seasonal mise en place • Develop understanding of flavour balance and menu structure Resource Responsibility • Use ingredients carefully to minimise waste • Support portion control and preparation accuracy • Maintain awareness of product value and storage standards Food Safety and Standards • Follow HACCP requirements at all times • Maintain high personal and kitchen hygiene standards • Ensure correct labelling, storage and cleaning procedures • Work in full alignment with established SOPs We offer: EHA offers a thoughtful, high standard working environment grounded in authenticity, care and personal agency.
