Assistant Head Baker

Taffelbay is a bakery chain in the Copenhagen area seeking an Assistant Head Baker to support the Head Baker in daily production and to take charge in their absence. You will ensure that dough and make-up are produced to a high standard on schedule and provide clear direction to the team during every shift.

What you will do

• Run the Dough department alongside the Head Baker, managing mixing, temperatures, resting times, and scheduling.
• Oversee Make-up (weighing and panning) to ensure products are shaped and ready for the ovens.
• Follow and adjust the production plan based on changing volumes, sales, or staffing.
• Monitor quality at every stage, from dough consistency to the final bake, and correct any deviations.
• Act as deputy for the Head Baker, making production and quality decisions when needed.
• Train and guide colleagues and help new team members learn recipes and standards.
• Ensure hygiene, cleaning, and own-check routines are followed and records are completed.
• Coordinate with the Laminated Pastry team, Scaling Room, Night Bakery, and Packing & Dispatch for smooth handovers.
• Report stock needs and flag waste or shortages to Stores & Inventory.
• Assist in preparing for peak periods such as Fastelavn, Easter, and Christmas.

Who you are

• Possess strong baking skills in dough handling and shaping.
• Well-organized with calm and clear leadership skills on the shift.
• A good communicator capable of working in a multilingual team.
• Highly attentive to quality and hygiene standards.

Employment Details

• Contract: Salaried employee (funktionær) contract, full-time (37 hours per week).
• Working Hours: Daytime hours, with one fixed weekday off and work every second weekend.
• Workplace: Strandvejen 213, 2900 Hellerup.
• Start Date: 9 November.
